Zendesk Web Widget and SDK

How can I set organization and user fields using metadata from users logged into our app within the Zendesk Web Widget and SDKs?

I want the customers name, email, phone number, and any other metadata we have to be passed to the proper fields. Not custom fields on the conversation.
